The manufacturing of AOP Gruyère is passed on through generations, following its ancestral recipe in village cheese factories and in mountain pastures.

In Montricher, as well as in Ballens, Apples and over 160 village cheese factories in the cantons of Vaud, Fribourg, Bern and Jura, milk has been used to produce Gruyère AOP for many decades.
